Kim's   Garden  Special  Basil   Pesto

 1/4 Cup Pine Nuts

1 1/2 Cups fresh Basil    

 2 cloves  of Garlic     

 

 

 

 

 

 3/4 Cup Olive Oil          

  1/4  Cup Parmesan Cheese 

Blend ingredients.  Add Parmesan after the other ingredients have become pasty.  Refrigerate or freeze with film of olive oil over the top.   From Joy of Cooking

 

 

 

 

 

Black Bean Tomato Basil SalsaDice 3 ripe roma tomatoes. Chop up 3 large basil leaves & 1/4 bunch cilantro, 1 red onion add 1/2 Cup of cooked black beans and the tomatoes.  Squeeze over this the juice of 1 lime, 1 drop Young Living basil essential oil and 3 drops Young Living black pepper essential oil. Mix well and add sea salt to taste. For a spicer salsa, add more black pepper oil.  Serve with organic blue chips.
